2. Make the BBQ spice blend. In a small bowl, combine some of the brown sugar, smoked paprika, cayenne pepper and garlic powder. Add black pepper and salt to taste.
3. Break down chicken wings. First, cut through the joint between the drumette and the wingette. If necessary, cut off the wing tip, then trim away any excess skin and discard, or save for another use.
